Sex is one's biology. It is determined at birth through inspection of genitals. There are 3 types of sex. Female, male and intersex. Gender is what you you choose to identify yourself as. Even though some people are born as a male, they might not feel comfortable being called a male. They would want to be called a female. Some people like to be called they, he/she and shay. Therefore, one can be biologically identified as one sex and be identified by their preferred gender.
