In this specific example the CS, CR, UCS, and UCR are identified as the following:
CS: Is the tone sound delivered prior to the puff of air. This is the CS because it is something that can be controlled by the one experimenting. UCS: Is the puff of air directing into the eye of the rabbit. This is the UCS because no matter what, there would be a response that follows after directing that puff of air. It is uncontrollable. CR: Is the rabbit starting to blink after hearing the tone sound and before having the puff of air directed into its eye. This is the CR because the rabbit has been conditioned and has learned that every time it hears the sound of the tone, there would be a puff of air directed into its eye immediately after. UCR: Is the rabbit blinking after the puff of air is directed into its eye. This is the UCR because it is in the nature of the rabbit to blink every time when a puff of air is directed into its eye. It is uncontrollable.
In my opinion it is actually quite simple to undo the conditioning. After the classical conditioning, the rabbit is now blinking immediately after the CS and before the UCS because it knows that the UCS (puff of air) would take place right after the CS (tone sound). In order to undo the conditioning all one has to do is initiate the CS but not have the UCS take place after. At first the rabbit would still be expecting the UCS and create a CR/UCR (blinking of eye) but after several tries the rabbit would get used to not having the UCS and would not create a CR/UCR after the CS.

good answer - especially explaining why you chose those variables for CS UCS CR and UCR.
