Sex is the biological categorization of people theoretically based on karyotype, but practically based on genitalia. Gender is about presentation and representation of sex, it's about identifying and personifying a sex. This is a very important distinction for psychologist, because where sex is less often chosen, gender is more malleable. Sex can be altered with surgeries and the like (though of course, there is controversy around even that statement) where as gender is about how you represent yourself and how others perceive you. We all have nuanced experiences with our gender or gender presentation, and this is arguably more susceptible to social influence and norms. "Gender identities are constructed" means that being masculine or feminine mean specific things culturally and socially, but are not innate categories with universal characteristics. The perception of being female has changed a lot over time, and definitely cross culturally, proving that it is in fact constructed.
